Thanks Mindhunt. This is one of my Dad's favorite month's. It is March Madness and the Husky Women's B-ball team keeps making history. I think they are up to a 107 game winning streak and other assorted records. Just phenomenal. The men haven't been so consistent. The women just won't let themselves be beat!

Now, still wondering what I'll be making for dinner tonight. I better figure it out soon, though, lol.

Well, waddy know... the neighbor just knocked on the door. I had my son give her chickens the beet greens from last night, just a few minutes ago, and now she sent her daughter over with some fresh eggs! I think I know what to make, now! Ham, broccoli and cheese quiche. Two of 'em! LOL

An imageLeftovers....that's why I made two! Lol The second one is ham, spinach, goat cheese, topped with sliced tomatoes.

Today, I am supposed to be on strike, not buy anything and wear red today for International Women's Day.  Wish I knew that before I finished up all that laundry. I have to volunteer for the Post Prom decoration projects tonight. I think that is allowed so long as I wear something red? Does underwear count?

I do caper chicken and roasted garlic mashed potatoes with fresh chives, shallots, and curry.  Caper chicken is chicken breast pounded thin, spiced flour, egg, panko bread crumbs, fry up over medium heat, season to taste and flip, then just before done, dump a bottle of capers with juice on them and finish.  Or soak cut up chicken in soy sauce, Chinese five spice, Worcester sauce, sesame oil, and a few drops of fish sauce over night. Cook up in a sauce pan, add cut up baby corn, bok choi, any other veggies.  Add heavy cream to the sauce.  Cook up some Udon noodles, make the spicy mayo of 2 parts mayo (I use Duke's) and 1 part sour cream, sriracha chile paste to taste, fresh lime, and either tahini paste or sesame oil to taste. Whip it up and add to the dish if you want.

Mindhunt, both of those recipes sound delicious. I will try each of them. Maybe without the Udon noodles, don't have those, how about linguini noodles instead? The amazing thing is, on my last shopping trip, for some reason I felt compelled to throw in a can of baby corns (and water chestnuts) , they also were not on my 12 item list, either! Lol

I always have capers, too. I ❤️ them! Do you add curry to the potatoes? Never heard of that! Sounds very different.

I am pretty sure I am the only one here watching the March madness. Saw the Women Huskies live in Bpt, beat Miami and then destroy the Oregon Ducks. Going five for five straight NCAA championships and are again on their way to the Final Four in Dallas. The world record winning streak just keeps growing. Geno is the undisputed best!

Got some family going to watch them in Dallas, too. I will have to look for them on ESPN, lol.

The Huskies (women) have been on a roll. Looks like it isn't going to end anytime soon. I hope they win it all again.

They are talking plowable snow for us this weekend, I hope it misses us. I'm all snowed out. LOL
