In the spirit of the season, Auntie Shelley, who loves to cook but hates Campbell’s Cream of Mushrooms soup, would like to share her crowd-pleasing recipe for “Not Your Mother’s Green Bean Casserole” with her friends. You can cut the recipe in half, but no matter how much I make for holidays and potlucks, I always come home with an empty pan. You can also make it in advance and re-heat it in the oven, but if you re-heat it in the microwave the cheese and sour cream separates. It definitely isn’t cheap, and certainly not low-calorie or heart-healthy, but it sure is good!

 

Auntie Shelley’s Green Bean Casserole

 

  • 3 lbs. Green beans, cut and slightly steamed (fresh or frozen)
  • ½ lb. Lean thick cut bacon, cooked & chopped into ½” pieces (ham will do too)
  • 1-2 cloves minced garlic (thrown in with bacon near end of cooking)
  • 1 1/2 lb. Grated Extra Sharp cheddar cheese (or whatever cheeses you like)
  • 1 1/2 cup Sour cream
  • 1/3 Cup Dijon Mustard (I use Grey Poupon Country Dijon)
  • 1 Tbsp. Worstershire Sauce
  • 2-3 scallions, chopped
  • Lg Can French Fried Onions

 

Mix beans, bacon, garlic and ¾ of the cheese. Place in rectangular baking pan. Warm sour cream, mustard, Worstershire sauce in a saucepan over l

The rest of the recipe...

Warm sour cream, mustard, Worstershire sauce in a saucepan over low heat, stirring to mix. DO NOT ALLOW TO BOIL. Stir the sauce into the beans and spread everything evenly in the baking pan. Spread the remaining ¼ of the grated cheese on top.

 Bake at 350 for 30 min. Add french fried onions after 20-25 min. just to warm.

I'd like to add one. I usually make 2 of these just to have a couple pieces to take home!!

Pumpkin Pie

2 eggs, beaten, 1 1/2 cups FRESH pumpkin (canned is CHEATING!!!!!!!), 3/4 cup packed dark brown sugar, 1/2 tsp salt, 2 tsp cinnamon, 1/4 tsp ground cloves, 1/4 tsp ground nutmeg, 1 1/2 cups evaporated milk

mix all ingredients well with wire wisk, pour into pie crust. pre heat oven 375 degrees 40-45 min. until toothpick inserted comes out clean.

crust

1 cup flour, 1/2 tsp salt, 1/3 cup + 1 tblsp shortning, 2-3 tblsp isc cold water.

sift together dry ingredients, cut in shortning with back of fork. add water little at a time and lightly work into dough. put in between 2 sheet wax paper and roll out. put in fridge 5 minutes(makes the dough lift off the wax paper easier) and there you have your crust.

All i can say is YUMMY and i can't wait for the big FEAST.

Might i add my Super Secret Deviled Egg Recipe

-one dozen eggs, boiled and deshelled

-3tbs of miracle whip light(keep in mind your figure)

-1/2 tsp of salt and pepper combined

-1 tsp of regular mustard

-1/2 tsp of dried mustard

-1 tsp Garlic Salt

Stir all ingredients into a big bowl. Using a regular teaspoon put a dollop of the mixture into each halved egg.

Sprinkle with Smoked Paprika

And served chilled

No bean stew but I have an awesome recipe for Lima Beans with ham. The secret to the "social" aspects is the baking soda. ;-)

Oh my...when I get home I'll have to post the recipe for bread pudding that my fiancees family always asks me to bring. That stuff makes your arteries clog just reading the recipe!
